The first time I tried kale I hated it. After that moment I kept on thinking I hated it until I impulsively bought a bunch for just $2 at the Farmer's Market. I bought it because I was trying to be healthier and everyone right now says kale is healthy. After scouring the internet I finally settled on a recipe, altered it a little, and now I love kale! I can't vouch for it cooked any other way, but I will definitely be remaking this as I imagine all the different things I can do with it!
To prepare the kale, cut the leaves away from the stems and chop into one inch pieces.
Heat the oil over medium heat in a large skillet. Add the tomatoes, green onion, garlic, thyme, and red pepper flakes for a few minutes until the tomatoes are soft.
Add the kale, salt, and pepper and stir with a spoon until the kale starts to wilt but is still bright green. This took me about 2 minutes. Stir in the basil then turn off the heat and let sit for a couple minutes.
That's it folks! To stick close to the recipe I put some on top of fried eggs.
The next day I also added some to cooked quinoa with chicken.
I think it would also be good over pasta, added into a larger stir fry, or just eaten on its own!
