These are my absolute favorite cookies of all time!
In a large bowl, cream butter and sugar. Beat in the egg yolk and vanilla. In a separate bowl combine the flour, baking powder, and salt.
Gradually add to creamed mixture and mix well.
Divide dough in half. Add extract and red food coloring to one portion.
On a work surface, roll out each portion of dough between waxed paper into a 16" x 10" rectangle.
Remove waxed paper (we did this by flipping the top piece over), placing red rectangle over the plain rectangle. If crumbles occur simply squish back into place with fingers.
Tightly roll up jelly-roll style, starting with a long side. Wrap in plastic wrap and refrigerate overnight or until firm.
Unwrap the dough and cut into 1/4 inch slices. Place 2 inches apart on lightly greased or parchment covered baking sheets. Bake at 350 degrees for 12-14 minutes or until set. Cool for 2 minutes on pan before moving to wire racks to cool completely.
*Optional: Make a glaze of powdered sugar and a little milk. Brush tops of cookies (or in my case messily drizzle on table, getting equal amounts on glaze on cookie and table) with glaze and sprinkle with crushed candy canes.
