I made these cupcakes for my sister's birthday. The original recipe can be found here. My family enjoyed these cupcakes a lot, and they can easily be made without the Nutter Butter cookies, turning into peanut butter banana cupcakes. I also cut out two cups of powdered sugar in the frosting because mine seemed thick enough without all that extra. Be careful of snacking on the frosting while making it, for too much will give you an awful stomach ache...
CUPCAKE INGREDIENTS: 1 box yellow cake mix, 3 ripe bananas (smashed), 1/3 vegetable oil, 3 eggs (beaten), 1/2 cup plain Greek yogurt, 2 tsp vanilla.
FROSTING INGREDIENTS: 3/4 cup butter (softened), 2 tsp vanilla, 2 TBS almond milk, 1/3 cup crushed Nutter Butters (or substitute more peanut butter), 2-4 cup powdered sugar (I used 2), extra Nutter Butter cookies for decoration (optional).
