My family has been making this recipe ever since I can remember. When I looked up other soda bread recipes on the internet I found that they all had raisins or other kinds of dried fruit! This may not be traditional to the Irish, but it is to my family. I don't know what it is about this bread, but I find it very addicting. My favorite way to eat it is warm and spread with butter!
Preheat the oven to 325 degrees.
Grease a 9x5 loaf pan.
Combine the flour, baking powder, sugar, salt, and baking powder.
Blend the egg and buttermilk together then add all at once to the flour mixture. Stir in the butter.
Pour into the prepared pan and bake for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Best if eaten when cooled or wrapped and left overnight.
This bread was gone in two days. Everyone is my house loves it!
I enjoy the fact that quick breads because they can be successfully made without the use of a dough hook. I haven't grasped the art of kneading dough by hand so a mixer is my only hope for traditional breads. I'll definitely be taking a hoard of quick bread recipes back to college with me.
