February and March Meals

4/10/2018

Here is the first post of many to come where I share some of the meals I make each month, along with some information on my grocery budget. The meals immediately below are from the month of February, during which I spent a total of $170.76 on groceries, or about $42.69 per week. The photos below are the meals I ate the most during this time. I also had many other meals that did not make the photograph cut. I found the first two recipes on Pinterest: African Sweet Potato Soup and Ethiopian Yataklete Kilkil.

Rice and beans with stir fried vegetables.

Gingered quinoa and peas, curried rice with chickpeas and apples, cherry tomatoes, meatballs.

Roasted broccoli and sweet potatoes, cucumbers with avocado dip, and homemade black bean burger.
The next series of recipes were my favorite meals from March. During this month I spent $92.81 on groceries, or about $30.94 for each of the three weeks I was in Milwaukee (I spent one week at home for spring break). The first is one of my meal preps for the month:

Brown basmati rice, roasted carrots and broccoli, stir-fried onions, peppers, and zucchini, guacamole, and chopped green onions.

The last two meals from March have heavily influenced my meals so far in April. Later this month I'll share my adaptation of a wonderful dahl recipe! I've also been keeping track of specific food items I spend my money on so I can share how to eat an adequate but affordable diet. I've been shopping around to make sure I'm getting the biggest bang for my buck!

I didn't take enough photos last week to make a decent recap post, so I'll combine it with this week's and hopefully have it posted on Sunday. Last week was full of stress over a big exam, but I also got to see Cirque du Soleil: Corteo and start my in-patient job shadowing. More stories to come. Have a great rest of your week!
