I always love the idea of muffins but love eggs just as equally, so why not combine the two?
I'll admit: these aren't the most attractive looking muffins you'll ever find, but they are pretty yummy. They're not really muffins at all, more like baby quiches (the first time I tried spelling it I only came up with "quishes")!
I really wanted to make a breakfast food but my mother who's currently doing the South Beach Diet can't eat regular muffins, so I made these instead! It's based off this recipe.
The ingredients are pretty versatile; for the most part just put in whatever scrambled egg add-ins you usually use!
Preheat the oven to 350 degrees Fahrenheit.
Beat eggs together in a liquid measuring cup (can just be a bowl too but the cup is easier to pour).

Spray muffin tin (remove excess spray from space between cups with rag for easier cleaning).
Fill cups with solid ingredients. I started with spinach on the bottom and cheese on top.
Carefully pour eggs into tins leaving a little space at the top to account for rising.
I put a couple tomato wedges on some just to see what they would taste like. Not bad!!
Bake for 25 minutes.
They bake until a toothpick comes out clean but the cheese on top threw me off a little so I think I over baked them a bit (28 min). The tops are a little wrinkled! :P
