Friday night Ryan and I wanted some pasta! We adapted this recipe from this one here. We started off following the recipe, but things headed off course after about 20 minutes.
Begin by caramelizing the onions. Add about a tablespoon of olive oil to a pan and add sliced onions. Cook on medium high for 10 minutes then add pinch of salt and cook on low for 10-15 minutes until translucent. Try not to burn. Toss in tablespoon of balsamic vinegar and coat onions then remove onions from heat.
Now boil a large pot of water and begin to cook noodles.
While noodles cook, add another tablespoon of olive oil to pan and saute mushrooms for about 6 minutes or until cooked. Pour onions back into pan with mushrooms then add spinach. Stir until spinach wilts. Don't forget to check on pasta periodically. Strain whenever done and set aside.
Pour heavy cream and milk into mushroom, onion, spinach mixture and allow to thicken for a couple minutes. Slowly add in cheese to finish sauce.
Carefully add noodles to sauce and stir with a pronged spoon to coat as evenly as possible. This part was a little awkward for us.
