These have been an addiction of mine lately. Good thing they're cheap and easy to make! I used the basic recipe from AllRecipies but have been making them so frequently that I just eyeball the amount of olive oil and spices. I've gone through about half my jar of Kicking Cajun seasoning because it's become such a staple and don't know what I'm going to do when I run out!
You can also add garlic powder, paprika, or other spices of your choosing. I'll be experimenting more once my Cajun blend runs out!
Start by preheating the oven to 425 degrees.
Next, peel your sweet potatoes.
Cut them into fry-sized pieces. I find it easiest to cut the potatoes in half the fat way, then the long way and slice from there.
Add the olive oil and spices and mix thoroughly with your hands. Have some dish soap at the ready to wash your hands with afterwards because they will get slimy!
Grease a baking pan with a nonstick spray. This step is extremely important. After greasing, pour the sweet potato mixture into the pan.
Place the pan in the oven and bake for 20 minutes, stirring the potatoes around at the 10 minute mark. Remove them from the oven and let cool, then enjoy!
After making a batch, I eat them along side every single meal until they're gone! They only ever last a couple days!
